Анализ санитарно-гигиенических требований к живым двустворчатым моллюскам и районам их выращиванияAbstract
The analysis of sanitary and hygienic requirements, established by EAEU Technical Regulation 040/2016, which should be met by aquaculture farms in the process of bivalves cultivation, has been carried out. The retention of live molluscs in distribution and purification centers with the aim of their biological cleaning is a compulsory requirement. European experience concerning zoning of the areas of mollusc cultivation on the basis of presence of fecal coliform bacteria is analyzed, as well as the possibility of marketing molluscs without preliminary retention in distribution and purification centers. Absence of the regulatory instruments on zoning of the areas of mollusc cultivation in the Russian Federation is highlighted. It is noted that AEU Technical Regulation 040/2016 establishes uniform microbiological standards for live mussels, irrespective of whether the molluscs are meant for consumption in live condition, or for industrial processing. Necessity of applying international experience on zoning of the areas of mollusc cultivation is pointed out; it should make possible to set microbiological standards for live molluscs depending on the contamination with coliform bacteria and to precondition the cases, when retention of molluscs in distribution and purification centers would not be a compulsory requirement.Проведен анализ санитарно-гигиенических требований, установленных техническим регламентом ТР ЕАЭС 040/2016, которые следует соблюдать хозяйствам аквакультуры при выращивании двустворчатых моллюсков. Обязательным требованием является передержка живых моллюсков в распределительно-очистительных центрах, проводимая с целью их биологической очистки. Анализируется европейский опыт зонирования районов выращивания моллюсков по наличию фекальных колиформных бактерий, а также возможность реализации моллюсков без предварительной передержки в распределительно-очистительных центрах. Указывается на отсутствие в Российской Федерации нормативных документов по зонированию районов выращивания моллюсков. Отмечено, что в ТР ЕАЭС 040/2016 установлены единые микробиологические нормативы для живых мидий независимо от того, предназначены моллюски для употребления в живом виде или для промышленной переработки. Показана необходимость применения международного опыта по зонированию районов выращивания моллюсков, что позволит установить микробиологические нормативы для живых моллюсков в зависимости от загрязнения колиформными бактериями и оговорить случаи, когда передержка моллюсков в распределительно-очистительных центрах не будет являться обязательным требованием.
