      Results of preliminary studies on the use of sodium alginate as a protective coating for fishery products showed that several varieties of fishes and shell fish had better keeping qualities when coated with sodium alginate.

      Seasonal viariations in the incidence on fresh surfaces, breeding season, rate of growth and mortality of Balanus amphitrite communis was studied for a period of twelve months in the Cochin harbour waters, situated 76̊ 14'E and 90̊ 57'N, and subjected to annual seasonal changes in salinity.
    • On a rational criterion for assigning batch number to processed products of shrimps

      Investigations were conducted to find the variability of processed shrimps with respect to two quality characteristics, namely, the numbers of deteriorated and discoloured pieces. Samples were collected for three days from two arbitrarily selected processing factories from Cochin at the pre-freezing stages. Results show that both the quality characteristics vary significantly between different size-grades, but while the variation in the number of deteriorated pieces between days is not significant, the variation in the number of discoloured pieces between days is significant.
    • Sampling of frozen prawns for bacteriological estimation

      Experiments were conducted to study the significance of difference between samples taken from the surface and interior of a frozen shrimps block, as well as to determine the size of sample necessary to represent the whole block, with respect to bacterial count determination. The results showed that the surface samples and interior samples did not differ significantly at 5% level of significance and that the minimum quantity representative of the block was 21-26 gms in the case of a block weighing about 1300 gms. The procedure adopted for taking the bacterial count was the normal standard plate count method.
    • Towing resistance of ottar [i.e. otter] trawls used for shrimps from small mechanised boats

      Attempts have been made to determine the towing resistance of the shrimp otter trawls operated from small trawlers off Cochin and the actual resistance on the warps for eight different boats working under the normal fishing conditions have been measured. Engine Horse Power utilised for towing the gear at normal speed and fishing conditions has also been estimated.
    • Preliminary experiments to evaluate the relative efficiency of different natural baits in line fishing

      A series of experimental hand-line fishing operations were conducted off the Madras coast employing five different types of natural fish baits. Based on the total catch of fish per day of fishing under each type of bait used, a comparative study on the catching efficiency of the different natural fish-baits was made. The reaction of the fish to particular bait appears to be the result of a complex process. Live baits have the maximum catching efficiency as seen from the fish landings when live prawns were employed as the bait. The procurement of live baits is a serious problem to the fishermen and as such suitable artificial fish lures can be profitably employed.

      A general survey carried out on several brands of frozen prawn products has shown that along with the standard plate count (SPC), the numbers of pathogenic organisms like Escherichia coli, enterococci and coagulase positive staphylococci have also to be taken into consideration for the evaluation of the quality of these products. No correlation could be established between the total plate count and the number of E. coli, enterococci or staphylococci. Enumeration of enterococci, however, is advocated as a better index of faecal contamination of the products than E. coli.

Peeled and deveined prawns inoculated with a mixed culture of the above organisms were subjected to freezing and storage at -10̊F and examined for over four months.

Calorific value for protein, fat and carbohydrate fractions and total calories for each species were also calculated.
    • Effect of aureomycin on the behaviour of certain free amino acids in oil sardine (Sardinella longiceps) held in ice storage

      The course of development of a few free amino acids under the influence of aureomycin in oil sardine (Sardinella lingiceps) held in ice storage was investigated. The levels of leucines and valine regularly increased in the control and aureomycin treated fush throughout the storage period. Alanines and threonine showed similar trend in both control and fish treated with 20ppm aureomycin. These amino acids however showed a gradual fall in fish treated at 5 ppm level. The changes in tyrosine+tryptophane were found to be irregular. Most of the amino acids studied indicated a remarkable change in trend by about the 16th day of ice storage in the case of fish treated with 50ppm aureimycin.

    • The development of the freezing and export of prawns in India

      The paper deals with an overview on the preservation of fish by freezing process. Until a few years ago the surplus catches of fish, prawns were being dried, salted or pickled. The Kerala coast had always yielded large catches of prawns and about 5000 tons of dried prawns were annually exported to Burma and other Eastern countries. The Government of India looking at the great potential of this industry, has now, with a view to encourage exports, provided a series of incentives towards this end.

      In appreciation of the pressing need for coordinated research in various aspects of fishery technology and for the overall development of fisheries industries in India, the Ministry of Food and Agriculture had decided to set up the Central Institute of Fisheries Technology. The Institute was established in 1957 at Cochin (Ernakulam).The research work at the Institute including its sub-stations and units is carried out in two wings: Craft and Gear Wing and Processing Wing. The third unit, the Extension Information and Statistics Wing, renders a service by functioning as a liaison between the research laboratories and the industry.
    • Studies on packaging of fresh fish

      Studies conducted in the laboratory and field have shown that iced fish can be preserved for longer periods in fresh and edible condition in conventional bamboo baskets by providing additional insulated linings of double layer of gunny and polythene or bitumen coated kraft paper. The quality of fish is adjudged by chemical and organoleptic evaluations.
