Fish production from the Uganda water systems is estimated at 245,000 tonnes. Much of this catch undergoes processing of one type or other to preserve the fish for distant markets or to improve the form for various consumer preferences. Much of the processing is done on small scale using traditional methods by artisanal operators. Recently, however, industrial processing has been introduced, mainly for the export market. It is believed that many areas of the country do not have access to fish supply as a result of unsatisfactory preservation methods. Similarly, post harvest losses in fisheries is still considered to be a major problem, as most of the product on the market has very short shelf life.
