Meat products with soya fiber: An alternative for the celiac populationAbstract
Se estudió la influencia de diferentes combinaciones de fibra de soya (1,5; 2,0; 2,5 y 3 %) sobre algunas características de calidad de las salchichas. Los componentes constantes para todas las variantes fueron: 55 % de carne de cerdo, 2,39 % de sales (sal común, sal de cura, tripolifosfato de sodio y ascorbato de sodio) y 1,20 % de condimentos. Además se tomó como referencia la formulación de una salchicha sin fibra. A las salchichas se les determinaron proteínas, humedad, grasa, pH, cloruros y nitritos. El perfil de textura se midió mediante una prueba de compresión doble en el Instron. Las mermas por cocción se estimaron como el porcentaje de peso perdido durante la etapa de cocción. Los parámetros del perfil de textura, mermas por cocción y los atributos sensoriales se procesaron mediante análisis de varianza y prueba de comparación de rangos múltiples de Duncan. Se obtuvieron embutidos tipo salchicha, enriquecidos con fibra de soya hasta una concentración de 3 %, con buenas características texturales y sensoriales que pueden ser dirigidos a la población celíaca.Different combinations influence of soy fiber (1.5, 2.0, 2.5 and 3%) on some quality characteristics of the sausages were studied. Constant components for all the variants were: 55 % of pork, 2.39% of salts (common salt, cure salt, sodium tripoliphosphate and sodium ascorbate) and 1.20% of condiments and the control were a sausage formulation without fiber. Proteins, moisture, fat, pH, chlorides and nitrite in all variants were determined. Texture profile was measured by means of double compression test in the Instron. Cooking lost measured as wight lost was also determinate, too. Texture profile parameters, cooking lost and the sensorial attributes were processed by means of variance analysis and multiple test of Duncan range comparison, both to p < 0.05. Sausages enriched with soy fiber until a 3% were obtained. They had good textural and sensorial characteristics and they can be directed to the celiac population.
