Abstract
Fishery industries specially those conditioning crustacea generate important amounts of waste, within that context, the shrimp waste of Parapenaeus longirostris need to be treated in order to reduce environmental pollution problems and to exploitation of its nutritional values. According to the analyses made upon these byproducts, it was concluded that the dried shell waste has the higher nutritional value than the fresh by-product.
